Idk if this is a joke but no, you don’t want to submerge the fryer in sani solution.
Think about what we’re doing here. We sanitize either w the machine which gets it to a sanitizing temp, or we use the solution which is diluted bleach that sanitizes then evaporates off as it air dries.
The outside of the machine can be wiped down with sani solution and air dry and that’s fine. That’s a lot more than most kitchens do. Afaik w the inside of the fryer you never want to use chemicals outside of soap (you don’t even need that really). Whenever anything except clean water or oil is used in the fryer you boil it out w water to get the soap out and also that also sanitizes.
Fryers run really hot so that oil at 350 or 400+ degrees is already killing anything sani solution would. Whenever you add chemicals in to the fryer you just risk contamination of the oil once it goes back in.
Tl;dr – you wipe it down w clean rags until it *looks* clean. Boil out w water before adding oil if you use soap. Don’t ever use chemicals like sanitizer inside a fryer.
